Preheat your oven to 425°F (220°C). Arrange the frozen fries on a large baking sheet in a single layer. Bake for 25 to 30 minutes, flipping once halfway through, until golden brown and crispy.
While the fries are baking, cook the bacon in a skillet until crisp. Let it drain on paper towels, then crumble into pieces. Shred the cheddar if using a block. Chop the green onions.
Once the fries are crispy and hot, transfer them to a large oven-safe serving dish or platter. Sprinkle the cheddar cheese evenly across the fries.
Return the dish to the oven for 3 to 5 minutes, or just until the cheese has fully melted.
Remove from the oven and immediately drizzle with BBQ sauce and dollops of sour cream. Top with crumbled bacon and chopped green onions.
Serve hot while the cheese is gooey and the fries are still crisp.
